Three Cheese Mac & Cheese

JTM Products:


1) Heat JTM Three Cheese Sauce in a steamer, kettle or boiling water.

2) Heat for approximately 45 minutes and check for an internal temp. of 165F or higher (HACCP Critical Control Point - 145F for 15 seconds)

3) Once the product has reached internal temperature, place on the serving line or in a holding cabinet. Hold hot (HACCP Critical Control Point - 145F or higher) until ready to use.

4) Cook cavatappi pasta until al dente; drain, rinse and coat with olive oil or non-stick cooking spray.

5) Open the bag of three cheese sauce carefully and place in 2'' deep full size hotel pan.

6) Add pasta to hot cheese sauce and blend thoroughly.

7) Place in a holding cabinet (140F) HACCP until service.
